Mediterranean Chicken Drumsticks

fat-free chicken drumsticks I’m a real fan of drumsticks!  They have great flavor and they are easy to consume on the go.   Since our family has bizarre eating hours, these are a healthy and delicious option I keep in the fridge to nosh on when a meal is too much and carrot sticks just won’t cut it!  They are a proven favorite at cocktail parties, horse shows, picnics, writing group buffets, and on rainy Wednesday afternoons when it’s time for a quick lunch.

This version of the recipe is part of The Moscovore’s series of articles on how to follow the Dukan Diet in Moscow:  I’ve removed the olive oil I would generally include in the marinade.  If you aren’t following the diet — go ahead and re-introduce.   If you are following the diet, you’ll sadly have to remove the skin of these drumsticks.  Be sure to pass it on to someone who will enjoy it — or add it to the trimmings bag for Chicken Stock.

I think these are better cold than hot.  They pair beautifully with Lemon-Dijon Mustard Sauce.

Mediterranean Chicken Drumsticks for the Dukan Diet

Tangy lemon and fragrant rosemary and thyme combine to make these chicken drumsticks a winner! Designed for the attack phase of the Dukan Diet.

Ingredients

  • (6 Tbl) 90ml prepared mustard
  • (2 Tbl) 30ml fresh thyme
  • (2 Tbl) 30 ml fresh rosemary
  • (1 Tbl) 15ml kosher salt
  • (1 Tbl) 15 ml fresh cracked black peppercorns
  • (2.2 lbs) 1 kg chicken drumsticks

Directions

1. Use the point of a small, sharp knife to pierce the skin of the chicken, making about four ½-inch slits in each drumsticks, two on each side.
2. Combine the remaining ingredients in a food processor, fitted with a steel blade. Use a few tablespoons of water to thin as needed.
3. Brush the marinade onto the chicken drumsticks, then arrange in a non-reactive dish, cover with plastic wrap and chill for at least 1-2 hours (or overnight if you wish).
4. Preheat the broiler to medium high, and adjust the oven rack so that it is about 5 inches from the heat source.
5. Arrange the chicken drumsticks, skin side up on a baking sheet and broil for 4 minutes. Turn the drumsticks to the bottom side with a pair of tongs, then broil for another 4 minutes. Remove and tent with foil for 20 minutes.
6. These are great cold – and keep for up to a week in the fridge, so if you think they will be handy, double or triple the recipe. Unfortunately, of course, you have to remove the skin if you are adhering to the Dukan Diet strictly!
