Middle-Eastern Dressing

I love the flavors of the Middle East!  I’d put coriander seeds in brownies if I could get anyone to eat them!

Enjoy this versatile dressing with meat, poultry, vegetables, and grains.  Designed for the followers of the Dukan Diet, it has no oil and works very well with Dukan-friendly Meatballs or some of The Moscovore’s other Middle Eastern specialties such as Chicken Za’atar or Lamb & Shrimp Kebabs.

Middle-Eastern Yogurt Sauce

A pungent oil-free Middle Eastern dip or dressing, designed for use with the Dukan Diet

Ingredients

  • (4 Tablespoons) 60 ml lime juice
  • (6 Tablespoons) 90 ml fat-free yogurt
  • (2 tsp) 10 ml crushed coriander seeds
  • 1 bunch fresh coriander (cilantro)
  • 4 cloves garlic, mashed
  • (1 tsp) 5 ml sumac

Directions

1. Combine all the ingredients except for the sumac into a food processor fitted with a steel blade. Combine until smooth. Sprinkle sumac on top.

Serve, and enjoy!
